Cake in a jar


I am not so keen on cooking but I love baking!

Unfortunately my family doesn't really like cake, don't ask me why...
For me, cake is the ultimate comfort food. I love everything about it, the smell, the sight, the texture, the countless possibilities.

This often means that I end up eating a whole cake by myself (having to do a LOT of yoga afterwards).

But today, years after the rest of blog land, I discovered the perfect solution:

Cakes in a jar!


 


They are gorgeous, they are delicious, they can be kept in the fridge for about 3 weeks, they can even be frozen,
they make wonderful gifts, and they are the perfect way to have your cake and eat it :-).


The first cake in a jar I tried is a delicious apple almond cake. The recipe comes from here.


What you will need:

4 mason jars of 250 ml (8.5 ounces) or 330 ml (11 ounces) each
180 g (3/4 cup) butter
3 eggs
180 g (3/4 cup) sugar
1 teaspoon lemon juice
200 g (1.6 cups) flour
1 teaspoon baking powder
3 to 4 apples
1 packet vanilla sugar (or some vanilla essence)
1 tablespoon icing sugar
2 tablespoons almond flakes

Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit)
Melt the butter in a pot
Whip the eggs, sugar and lemon juice until foamy
Mix the flour and the baking powder and stir into egg mix
Mix the butter in
Peel and cut the apples into small pieces and mix with the vanilla sugar
Coat your jars with oil, then fill in the dough, apples, dough, apples...
End with a layer of dough and only fill to about half of the height of the jar
Bake for about 20 minutes
Mix icing sugar with almond flakes and put on cakes
Bake for another 15 to 20 minutes, until an inserted skewer comes out clean







You can now either close the jars while the cake is still hot (that seals them), and keep them in the fridge or freezer,
or you can eat your lovely cake.

Of course today my family wanted to have cake too, so all my little jars are empty.

Which means I can make some more soon!
Maybe a chocolate version? Or banana bread? Or carrot cake...
