Pumpkin fritters


It is still pumpkin season.

Strangely enough, Eva has discovered that she likes pumpkin soup after all, so I made it a couple of times.

My man still can't stand it. The pumpkin in my fridge was about to go off, and I decided to (temporarily) give up
my resistance to veggies prepared in an unhealthy way, and finally make him some pumpkin fritters.
They were very yummy, and we finished the whole batch in one setting.

This is in honor of my lovely friend Danni, queen of the pumpkins.

You will need:

700 g (1,5 lb) pumpkin, sliced
100 g (7/8 cup) cake flour
1 teaspoon of baking powder
Cinnamon
1 egg
Oil

More cinnamon and some sugar to roll the fritters in after frying.



Boil your pumpkin in water with some salt until soft (about 20 minutes):

 


Mash it:



And then add the flour, baking powder, egg and half a teaspoon of cinnamon:



Mix it through, and heat up the oil in a saucepan:



Take tablespoon-sized blobs of batter and put in oil once it is hot. Fry it until brown on all sides, and then put fritters on some kitchen paper to soak up excess oil.

Then toss in sugar mixed with cinnamon and enjoy!

  7. Holy Cow - ha ha - that sounds like my son speaking, and he loves pumpkin fritters too. Always a double batch in our house (although I usually use butternut) Yours look really delish, Jutta!
