Apple streusel cake with cottage cheese


Long weekends are so lovely!

To celebrate our extra day off I baked an apple cottage cheese cake.
It does taste very delicious!




In case you feel like baking too, here is the recipe:

You will need:

For the streusel:

250 g (2 cups) self-raising flour
100 g (7/8 cups) sugar
120 g (1/4 lb) butter
1 egg yellow
vanilla essence

For the filling:

250 g (1/4 pound) cottage cheese
100 g (7/8 cups) sugar
80 g butter
2 egg yellows
3 egg whites
vanilla essence
4 apples


Preheat your convection oven to 170 degrees Celsius (338 Fahrenheit). If you don't have a conversion oven, bake the cake
at 180 degrees Celsius (356 Fahrenheit)
To make the streusel, cut the butter into small pieces and mix with the other base ingredients until it forms little crumbs.
Lightly press 2/3 of the crumbs into a round base.

Grind the apples and put them on top of the base.

Beat your egg whites until firm, melt the butter for the filling, then mix all the filling ingredients together, adding the egg
white at the end.
Distribute the filling over the apples.

Sprinkle the remaining streusel on top and bake for about 45 minutes or until an inserted knife comes out clean.

  1. Your cottage cheese looks more like our ricotta cheese. Are they the same? I would like to try to make this during the fall season. It looks so good!
