Salty Almonds

Over the last few weeks, I have become very lazy and kind of chubby. It didn't bug me at first, but now it is time to do
something about it before it gets out of hand.

This means exercising a lot more and starting to eat healthier.
So today I went to get fresh fruit and veggies, and a big bag of raw almonds. They are wonderful to make healthy sweets
and also to make salty almonds.
Yummy and great with red wine :-).

I used to make them before from a recipe out of an old Spanish cookbook. Yesterday I found a nearly identical recipe on
one of my favorite German blogs, Die Raumfee. Her recipe uses egg white, while the one in the cookbook only uses water.

I got curious and decided to try it out.

They taste basically the same with both methods, but the salt sticks better to the almonds when using egg white.

You will need:

300 g raw almonds (with the skin)
1 egg white
2 teaspoons of salt

Preheat your oven to 100 degrees celsius.

In the meantime, roast almonds in a non-stick frying pan until they start to crackle. Keep stiring them so they don't burn:

Turn the heat off and let them cool down. Then beat the egg white and the salt until a bit foamy.

Once the almonds are cool, mix them with the egg mix and put on a tray covered with baking paper.

Put in the oven for about 45 minutes. Leave a wooden spoon in the door to pop it open slightly. Turn the almonds regularly
while they are roasting.

Enjoy!

Lots of love,

  1. Yummm! Interesting with the egg whites. I like to make nuts as gifts at Christmas, so maybe I'll try this one too!

  2. Danni has a great idea there for gifting. I'm afraid that by the time I was ready to package them, there won't be any left. They look so good!

  4. These look delicious. I too love nuts and am getting a little chubbier around the middle. Now that it is autumn, cooking and eating are so appealing.

  5. These sound delicious and probably better for you than the store bought roasted ones. I'll have to try this!
Thanks, and I'm following you now.

  6. There are certainly a lot of details like that to take into consideration. That is a great point to bring up. I offer the thoughts above as general inspiration but clearly there are questions like the one you bring up where the most important thing will be working in honest good faith. I don?t know if best practices have emerged around things like that, but I am sure that your job is clearly identified as a fair game. Both boys and girls feel the impact of just a moment’s pleasure, for the rest of their lives.
