How to make healthy sweets, really :-)

I am eating mainly raw food, which is great for my mood, looks and general outlook on life.
But the one thing I really missed in the beginning is sweet stuff.

Then I discovered how to make the most delicious, delectable, quick and easy healthy raw sweets. Even my daughter prefers them now to chocolate bars.

They last for a long time in the fridge (at least I think so, in our household I have to make a fresh load daily).

The ingredients are easy to keep at home and there are endless variations.

Here we go:

For the most basic version of the sweets you need almonds, best soaked overnight (this releases the enzyme inhibitors nuts contain and makes them much easier to digest), raw honey or, a paste made out of dates and water (just put the dates and the water in the food processor, it becomes a lovely sticky brown paste) and desiccated coconut.
That's it.
You don't even have to bother with specific amounts, I always just throw it in and it has turned out great every single time.

Ground the almonds in your food processor. I use a small one from Phillips which works like a charm. You can of course also buy ground almonds already, they just won't be soaked then.

This is what it looks like after the almonds have been ground.

Next put some coconut in on top of the almonds.

Then put honey on, I normally use about two teaspoons of honey. You will see if the mixture sticks once it has been mixed. If not, add more honey.

Then you mix it again until it becomes sticky.

Now form little balls out of the mixture and put it in the fridge. They taste best when they have been cooling for a while.

Et voila!

You can roll some of the balls in coconut to make them look nicer.
You can add carob or raw cacao for a wonderful chocolaty taste.
You can press them into cookie cutter hearts to make a statement :-).
You can pack them nicely and give as presents.

Or you can make yourself a cup of tea, grab a wonderful interior design book and enjoy!
