Chicken cream pasta, and some thoughts about life


Nearly every day I am cooking lunch.
And nearly every day I resent it a little bit.
It just always takes so much time I would rather spend differently...

So today I again felt the resistance building. And then I suddenly realized that what I am resisting is my life.
And while I am feeling as if I am in the wrong movie (wasn't I supposed to be a heroine, having lots of adventures,
lots of money, no responsibilites, and an endless supply of chocolate?) my real life passes me by...

My life is in the things I do every day, in each little moment.
The way I feel about these moments determines the quality of my life.
There is no 'one day', there is no 'some place else'.
There is only me and what I am doing right this instant.

So I tried to pay attention to the color and texture of the food I am preparing, to consciously cut the vegetables and
spice the chicken, to be present to these precious momenst of my life that will never come again.

I tried to actually be part of my life.

What a gift it is to have to make lunch each day :-).



And in case you are also allowed to make lunch, here is a recipe that (another miracle) everybody in my family likes:



Chicken Pasta with Capers and Cream:

You will need:




3 Chicken breasts
300 g Rigatoni pasta (or any other pasta you like)
1 cup Cream
Capers
Lemon juice
Olive Oil
Spices




Cut the chicken breasts into small-ish pieces and mix with lemon juice, olive oil and your favorite spices.
In the meantime boil the pasta.
Fry the chicken pieces in some olive oil. When they are nearly done, add capers and cream and let simmer for a while.
Add pasta to sauce and enjoy!
