Cocos macaroons and a poem for all mothers

Eva's friend stayed over with us Friday night. On Saturday afternoon they refused to be separated, and Eva went
home with Lola to sleep over there.

This morning I realized that I cheated myself out of a mother's day breakfast in bed.

But being her usual sweet self she actually called and told me that my mother's day is postponed to next Sunday :-).

As always on the weekend, I got the urge to bake.

This one is a very easy and quick recipe, all you need are:

3 egg whites
125 g sugar (3/4 cup)
some lemon juice
200 g desiccated coconut (2 cups)

Pre-heat the oven to 175 degrees Celsius (347 degrees Fahrenheit).
Beat the egg whites until firm, slowly add sugar while still beating. Also add about a teaspoon full of lemon juice.
Then carefully fold the coconut in.

Make little heaps on a baking tray covered with a baking sheet, and bake for about 15 minutes.

without cautioning us
to be careful

to remember the limitations
of being human.

It doesn’t interest me
if the story you are telling me
is true.

I want to know if you can
disappoint another
to be true to yourself.

If you can bear
the accusation of betrayal
and not betray your own soul.
If you can be faithless
and therefore trustworthy.

I want to know if you can see Beauty
even when it is not pretty
every day.
And if you can source your own life
from its presence.

I want to know
if you can live with failure
yours and mine
and still stand at the edge of the lake
and shout to the silver of the full moon,

It doesn’t interest me
to know where you live
or how much money you have.
I want to know if you can get up
after the night of grief and despair
weary and bruised to the bone
and do what needs to be done
to feed the children.

It doesn’t interest me
who you know
or how you came to be here.
I want to know if you will stand
in the centre of the fire
with me
and not shrink back.

It doesn’t interest me
where or what or with whom
you have studied.
I want to know
what sustains you
from the inside
when all else falls away.

I want to know
if you can be alone
with yourself
and if you truly like
the company you keep
in the empty moments.

    You are so very thoughtful. The poem was so moving - I really like poetry. Thank you for sharing it. I really liked the verse "if you can dance with wildness". I have literally made a decision to dance at least once a and with childlike expression..
    As for the cookies - DELICIOUS - will definitely be making them.
