Meringues

My chickens keep laying the most beautiful eggs.
Since they are allowed the run of the whole garden (and most of the house...), they are not that interested anymore
in breading. One of the hens might sit down for an hour or so, but then the call of the wild becomes to strong and she
runs back outside.

This morning I collected another 11 eggs.

Luckily my brother is here at the moment. Unlike the rest of my family, he has wonderful taste and actually likes to eat cake, cookies and other delicious sweet stuff.

So I made some meringues for him and myself:

You will need:

3 - 4 egg whites, depending on size of the eggs
175 g (1 cup) castor (superfine) sugar
vanilla essence

Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit).

Put the egg whites and sugar into a small bowl over a saucepan of simmering water.
Stir until the sugar is dissolved.

Remove from heat, then beat the mixture until thick and cool (takes about 10 minutes), add the vanilla essence and beat for another minute.

Cover a baking tray with baking paper and put blobs of the egg mix on.

Bake in oven for about 40 minutes (or until they start to get slightly brown). Turn oven off, open the door slightly, and leave to
cool before taking them out.

They taste delicious with cream and berries!

These flowers btw have nothing to do with the meringues, I just love the colors...

Hugs to you,

  1. How wonderful for your brother to be there! The meringues look good! Love that little feather in the bowl of eggs! I have to wait for winter to make them as it's too humid here now and they just get chewy.

  4. The eggs are quite beautiful indeed! Your meringues look delicious. My boyfriend hates sweets and my mother is diabetic, so I hardly bake at all these days, but yours look quite tempting!
