Peachy cupcakes


Today is yet another holiday in Namibia. Because of that, I feel compelled to bake.




This same conditioning also sets in on Sundays.
I bake and my man braais (what the people in other countries call barbecue).

It is a very good thing that I just did the 3 week challenge :-).


I used what I had and made it up as I went along.
Luckily, it did come out delicious and got the approval of the tasters:




Here is what you need:

200 g flour (1.6 cups)
2 teaspoons baking powder
200 g butter (7 ounces)
some nuts
some vanilla essence
160 g sugar (3/4 to 1 cup)
2 eggs
3 tablespoons greek yoghurt (you can also use normal yoghurt or cottage cheese)
1 can of peach slices

For the topping:

Icing sugar
the juice of the peaches
marzipan and food coloring




Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).

Melt the butter. In the meantime, mix the dry ingredients, then add the eggs and the butter.
Once mixed, add the peach slices (you can also cut the peaches up further so they get better distributed
throughout the dough).




Fill in cupcake holders and bake for about 25 minutes or until golden brown.

Mix the marzipan with your favorite color of food coloring. Roll it out thinly, cut in stripes and roll up so it forms
little roses.
Once the cupcakes have cooled down, mix the icing sugar with a little bit of peach or lemon juice, spread onto
the cupcakes and top with a rose.
